James Beard was a pioneer in the world of American restaurants and cooking – he helped to lay the foundation for what we now know as the local foodie movement. Emphasizing local products and fresh ingredients, part of his mission as a food connoisseur, according to author David Kamp, was “to defend the pleasure of real cooking and fresh ingredients against the assault of the Jell-O-mold people and the domestic scientists”.
